What are the features of Fukuoka’s ramen?

When it comes to the king of Fukuoka’s ramen, it has to be “Tonkotsu Ramen”.

The features are the milky white pork bone soup and the straight, thin noodles.

Due to the thin noodles, it’s not common to order a large serving, instead, a system of noodle refills (kaedama) is popular.

Another characteristic is that, because the noodles are thin, it’s common to specify your preferred noodle firmness when ordering.

Unique Tonkotsu Ramen with Soft Noodles and Super Rich Soup

“Kairyu” offers a Tonkotsu Ramen that’s recommended for those who love the unique flavor of Tonkotsu.

Their Tonkotsu Ramen inherits the style of traditional Kurume Ramen and is super rich!

The soup is made using a method called “Yobimodoshi”, adding only the reduced amount of pork head and back fat, creating a flavor that screams “This is Tonkotsu!”.

Although Hakata Ramen is often associated with thin, firm noodles, the noodles at “Kairyu” are medium-thin straight noodles, and they recommend “Zundare” (soft noodles).

The reason for this is that boiling the noodles well brings out a chewy texture and umami, and they pair excellently with the rich Tonkotsu soup.

Well-balanced rich, frothy Tonkotsu Ramen

This ramen, known as the “foamy” type, features a rich tonkotsu (pork bone) soup with fine bubbles on the surface. The soup, which has a rich mouthfeel, allows you to fully appreciate the flavor of tonkotsu, and the firm, thin, curly noodles mix well with the frothy soup.

While you can enjoy the robust aroma and taste of tonkotsu, the aftertaste is surprisingly light, creating a well-balanced masterpiece.

This shop operates as a ramen izakaya (Japanese pub) in the evening, making it a great choice for a bowl to end the night after drinking.
